When you saute the onions, garlic, cumin, coriander and garam masala, you bring out more of their flavours before adding the rest of the ingredients. It’s also so simple and quick to make for yourself and your family.

  • 1 kg Prawn meat

  • 1 tbsp butter

  • 3 tbsp oil

  • 1 Onion, finely chopped

  • 4 cloves Garlic, crushed

  • 3 Bay leave

  • 1 tsp coriander seeds, groundSalt to taste

  • 1 tsp Cumin seeds

  • 2 tsp garam masala

  • 5 large tomatoes, grated or finely chopped OR 1 tin tomatoes

  • 1 tsp ginger, fresh or ground

  • 1 tsp Tumeric

  • 2 tsp chilli powder

  • 4 fresh curry leaves

  • 2 tbsp brown sugar

  • fresh coriander

  • green chillies (to taste)


  • Heat butter and oil in a pot.
  • Saute the onions, garlic, bay leaves, cumin and coriander, garam masala until onions are soft, about three minutes.
  • Add the tomatoes, tumeric, ginger, curry leaves and chilli powder. Season with salt and pepper.
  • Add the brown sugar.
  • Simmer for about 20 minutes.
  • Add prawns, stir and let simmer for about 8 minutes.
  • Garnish with fresh coriander and desired amount of green chillis.
  • Serve with rice, roti or naan bread.
