Dried apricot chutney: Perfect for curries and even cheese boards

A dried apricot chutney is what you need to make this weekend. It’s a spicy and sweet preserve that’s perfect with cheese and biscuits or even in a curry. If you follow a vegan or vegetarian choice of food, this recipe is for you too.

Dried apricot chutney suggestions

This spicy chutney has a few chilies but you can adjust as you want to, however, the chilies help lift the different flavours in the preserve. As with other preserves, they are great with starter snacks with cheese and salted crackers. If you’re making original South African bobotie, this spicy chutney would be a great substitute for the apricot jam usually added to the dish.

Ingredients

  • 500 g 500 dried apricots

  • 500 g 500 sultanas

  • 4 large 4 onions

  • 12 12 red chilies

  • 1 litre 1 high-quality vinegar

  • 500 g 500 sugar

  • ¼ cup ¼ salt

Method

  • Put apricots, chilies, sultanas and onions through a mincer.
  • Add vinergar, sugar and salt
  • Bring ingredients to a boil and simmer for 1 hour. Stir well every few minutes.
  • When cooled, bottle and seal in mason jars.
