Crumbly coconut slices: Sweet and jammy tea time treats

If you’re planning a party or just want to bake for your friends and family, some good ol’ crumbly coconut slices are the way to go. Coconut is a great addition to any dessert and these are no different. The addition of jam increases the sweetness and if you make your own jam it comes out even better. They pair well with some coffee or tea with your best friends.

Crumbly coconut slices tips

The dough is easy to make and comes out golden and crumbly. The jam shouldn’t be too runny so that is stays in one place. Sprinkle some coconut over the top to finish. They are sweet and crumbly, making them one of the most enjoyable snacks you will ever make. Make sure to slice them while they are still warm so that they don’t crumble and fall apart before serving.

Ingredients

  • For the base:
  • 1 g flour

  • 1 large eggs

  • 2 tsp baking powder.

  • Jam or jelly.

  • 150 g butter

  • ½ cup sugar.

  • For the top:
  • 150 g coconut

  • 1 tsp vanilla essence

  • 30 g butter

  • 1 large egg

Method

  • Preheat oven to 150°C.
  • For the base:
  • Sift flour with baking powder and rub in butter. Add sugar and beaten egg.
  • Spread in baking tin. (about 25cm by 35cm) Spread with jam or jelly.
  • For the top:
  • Rub butter into coconut mixed with sugar. Add beaten egg and vanilla essence.
  • Spread evenly over base without disturbing jam.
  • Bake in oven at until lightly browned, about 30 minutes.
  • Cut into squares while still warm.
  • Sprinkle with coconut to finish.
