When it’s a day for a braai, South Africans often have some “pap en sous” which is just maize porridge cooked a bit stiff and usually covered in a tomato and onion sauce or chakalaka. However, there are other local staples that you can experiment with and our creamy mushroom samp is one of those experiments that just ends up being great. The savoury flavour from the mushrooms adds some great dimensions to this simple and tasty side.

Creamy mushroom samp suggestions

Samp does need to start it’s journey the day before as you let it rest in water. If you’re not used to cooking this grain, you might be adding water as it softens. The garlic and celery add some great aromatics to the dish and you can add some chilies if you want to add some heat to it. This tasty side is great with a roast chicken dinner during the week or with your grilled steak, chops and/or boerewors on the weekend.
