Well, there’s a universally loved pie that goes well with great chats and a warm cuppa’ and it’s apple pie. Our puff pastry apple pie recipe takes the classic to a whole new level and is simpler to make than you think. You’ll be flying to the pie like a cartoon character in no time at all.

Puff pastry apple pie tips

You can par-bake your pastry a bit if you are afraid of having a soggy bottom. Use store-bought puff pastry as it’s perfect and you don’t have to waste time. Make sure you use tart and firm apples such as Granny Smith, Pink Lady or Gala apples. Avoid using red or Golden Delicious as these will go soft and turn mushy. You can also leave the raisins out if you want to. Serve your apple pie with a generous scoop of ice cream or cream while the pie is still a bit warm.

  • 1 roll puff pastry

  • 2 apples (cored and unpeeled)

  • 1 tbsp lemon juice

  • cup brown sugar

  • 4 tsp ground cinnamon

  • ¼ cup raisins (optional)


  • STEP 1
  • Pre-heat oven to 200°C. Grease and flour a spring-form round cake pan. (If you don’t have a springform pan, line the cake pan with baking paper)
  • In a small bowl mix together the brown sugar and cinnamon. set aside.
  • Remove the core from the apples, but do not peel. Cut into quarters and thinly slice the apples.
  • Place the apples in a bowl and add the lemon juice and mix.
  • Once all the apples have been sliced, coat them in the cinnamon sugar mixture.
  • STEP 2
  • Roll out the puff pastry. Cut a circle about 10cm larger than the pie pan.
  • Cut the remaining pastry into strips and set aside.
  • Place the cut circle in the prepared pie pan.
  • STEP 3
  • Place a few apple slices around the border of the pastry.
  • Then add a strip of pastry around the apple slices.
  • Repeat with a layer of apples around the edge, followed by a strip of pastry.
  • Repeat this process until you reach the middle.
  • Bake at 200°C for 15 minutes then lower the temperature 180°C for approximately 15 minutes or until golden brown.
  • When complete, let it cool before cutting into it.
