The reason we love eggs for breakfast is because farmer’s used to get fresh eggs in the morning and have a great protein source for a day’s hard work. Then we started adding more protein and fat with bacon and eventually upgraded our breakfasts to a tasty quiche. This cowboy breakfast quiche isn’t your usual French cuisine as you add a great amount of bully beef, also known as corned beef, which is a farm-favourite preserved beef product that’s always ready to go when you need a protein source that’s quick to cook but still has all of those important nutrients.

Cowboy breakfast quiche suggestions

There’s no par-baking the crust, but you can. As it rests, you can cook the bully beef with butter and onions which will be rich in flavour, protein and fats. You can also add some spice with chili or chili flakes for another kick of flavour which goes very well with your strong morning coffee. Add some warm toast to the mix and you’ve got a full-loaded breakfast that will give you tons of energy for the morning until lunch.

Cowboy breakfast quiche recipe

  • 1 cup 1 flour

  • 1 cup 1 cheese, grated

  • 125 ml 125 melted butter

  • 5 ml 5 paprika

  • For the filling
  • 5 ml 5 butter

  • 1 1 onion, chopped

  • 1 tin 1 Bully beef (corned beef) cut into cubes

  • 1 tsp 1 mixed herbs

  • salt & pepper

  • For the topping
  • 6 6 eggs

  • 125 ml 125 cream

  • 1 tsp 1 wholegrain mustard

  • 1 cup 1 cheese, grated


  • Mix the crust ingredients together. In a greased pie dish, evenly spread the crust in the base.
  • In a saucepan, heat the butter. Fry the onions. Add the bully beef. Season. Spread evenly over the crust.
  • Mix the eggs, cream and mustard. Pour over the filling. Sprinkle the cheese over the top.
  • Bake for 30 minutes at a preheated oven at 180°C.
