Take a trip down memory lane by revisiting one of our heritage-rich dishes, traditional melkkos. This tasty dish is a winner for cold days. It is so delicious and soul-warming that one is not quite sure if it can be regarded as a main meal or actually a dessert.  

Traditional melkkos is always a favourite with kids and they will most likely ask for a second helping.  The best part is that you definitely have all the ingredients in your pantry already. So, when the rain starts pouring down again, quickly whip together a pot of steaming hot traditional melkkos to the delight of everyone around you.

  • 200 ml cake flour

  • 10 ml baking powder

  • 2 ml salt

  • 7 cups milk

  • 3 eggs, separated

  • 50 ml butter

  • 50 ml cinnamon and sugar for sprinkle


  • Sift the flour, baking powder and salt together.
  • Rub the butter into the flour until it is like crumbs.
  • Heat the milk until boiling point and then keep it on a low heat.
  • Beat the egg yolks and add a little bit of warm milk and mix. Add the egg yolk mixture to the warm milk in the pot. Be careful not to burn the milk during this process.
  • Gradually sprinkle the crumbs into the milk mixture on the stove and stir continuously until you have added all the crumbs into the pot. Cook slowly until it is cooked, then allow to cool slightly.
  • Beat the egg whites until stiff and fold into the mixture.
  • Mix the cinnamon with sugar and sprinkle over the melkkos when dished up in plates.
