Mushrooms are always welcome on a snack plate and our cheese-stuffed roasted mushrooms are fully-loaded with deliciousness. Our recipe is for the oven but you can easily make them on the braai when your friends are over for dinner.

Tips for your Cheese-stuffed roasted mushrooms

One great thing about mushrooms other than the great nutritional value is that they cook relatively quickly and they are hard to overcook. The recipe only used cheddar or mozzarella cheese but you can use any combinations you choose to. Garlic goes very well with mushrooms and is a subtle but delicious addition. When serving, serve with dips and make sure that they have cooled a bit because melted cheese is somehow hotter than you think.

Ingredients

  • 6 6 brown mushrooms

  • 2 tbsp 2 crushed garlic

  • 6 6 spring onions, chopped 

  • 1 tbsp 1 thinly chopped fresh parsley

  • 60 g 60 grated cheddar or mozzarella cheese

  • parsley for garnishing

  • garlic squeezed dipping sauce (optional)

  • coarsely ground salt and black pepper

  • 2 tbsp 2 butter

  • Smoked Spanish paprika

  • 1 1 lemon, sliced

Method

  • Preheat the oven to 220°C / 428°F.
  • Wash the mushrooms, take out the stems and chop very fine, add to a mixing bowl.
  • Add to the mushroom stems, the butter, garlic, ¾ of the cheese and spring onions. Mix well.
  • Add salt and pepper to taste.
  • Prepare a baking tray with baking paper. 
  • Spread the mushrooms on a baking tray and roast in preheated oven for 10 minutes, do not toss or turn.
  • Remove from the oven and sprinkle with remaining cheese and paprika. Change the setting to grill.
  • Put the oven tray back in the oven under the grill for about 1 to 2 minutes.
  • Remove from oven and allow to cool slightly.
  • Just before serving, squeeze over a bit of lemon juice and garnish with parsley.
  • Serve mushrooms drizzled with pan juices.
