The highlight to any braai is often something as simple yet delicious as braaibroodjies. The English translation of “barbecue sandwiches” just does not do this justice to this favourite side dish which is very much part of our South African food culture.

Although traditionally made with cheese, tomato and onion on plain white bread, it doesn’t have to be that way every time. Why not try a few variations for a change? Just don’t forget to mark the one without the onions!

Filling variations

  • Banana slices, bacon, and peanut butter
  • Mix mayonnaise with butter, add cheese and red onions
  • Mozzarella, tomato, cheese, and green pepper
  • Avo, green pepper, red onion, and cheese
  • Caramelised onions, biltong cheese and chutney
  • Banana, apricot jam and cheese
  • Mayonnaise, tomato apple and cheese
  • Caramelised onions, pineapple and cheese
  • Fig jam, feta, and black pepper
  • Bacon, banana, mozzarella, and cheddar with a little mayonnaise
  • Bacon, pineapple, mozzarella and cheddar
  • Sweet chillies, cheese and apple
  • Chocolate and bananas
  • Bacon, egg, cheese and maple syrup or honey.

It’s best to use plain white bread, and always cook on the braai with the butter side out. This will give it a crispy finish and make the braaibroodjies less likely to stick to the grid.

Here are some gourmet variations on the traditional South African braaibroodjie.

Ingredients

  • bread

  • butter

  • garlic

  • mayonnaise

  • chilli sauce

  • 3 tomatoes

  • 1/2 green pepper

  • 1 red onion

  • 2 white onions

  • bananas

  • peanut butter

  • apples

  • jam, apricot & fig

  • feta cheese

  • mozzarella cheese

  • cheddar cheese

  • bacon, grilled

  • pineapple

  • chutney

  • avo

  • biltong powder

Method

  • Grill the bacon in a griddle pan, set aside to cool.
  • Caramelise onions: Heat the oil in a large deep-frying pan over a low heat. Add the onions with a generous pinch of salt and cook slowly for around 30-40 mins. Add the sugar and vinegar to give them that sweet, slightly sharp, chutney vibe. Your onions are now ready.
  • Butter each slice of bread.
  • Add toppings of choice.
  • Add enough cheese to topping and place buttered bread on top of prepared slices. Place in a braai grid (butter side out) and braai until crispy and cooked.
