Looking for a tasty side dish to add to mealtimes? Try these delicious sweet potato rolls. These unique rolls are simply mouth-watering and will easily become a family favourite.

Make sure you have enough time when you prepare these sweet potato rolls as you need to allow the dough to rise twice. The first time, you need to allow the dough to rise for an hour. The second time, after shaping the rolls, you need to allow the dough to rise until they are double in size.

Baking time is only 20 minutes and then your beautiful golden sweet potato rolls will come out of the oven steaming with flavour. This recipe produces 12 delicious rolls. Enjoy with a slather of butter melting into the soft, warm roll.

Ingredients

  • 1 package of active dry yeast

  • 4 tablespoons white sugar

  • ½ cup canned sweet potato puree

  • ½ cup warm water 110°C

  • 3 tablespoons margarine, softened

  • 1 teaspoon salt

  • 2 eggs

  • cups all-purpose flour

Method

  • Dissolve the yeast in the warm water with 1 tablespoon sugar in a mixing bowl. Let stand 5 minutes.
  • Add remaining sugar, sweet potato, butter or margarine, salt, and slightly beaten eggs. Stir to mix well. Stir in 3 cups of flour.
  • Turn out on a lightly floured surface. Knead 2 to 3 minutes, adding just enough of the remaining flour to prevent sticking. Do not knead too heavily; when smooth, shape into a ball. Place in an oiled bowl, and turn to coat the surface.
  • Cover, and let rise about 1 hour or longer.
  • Punch down, and allow the dough to rest for 2 minutes. Divide into 16 to 20 balls, and place on a greased cookie sheet or in a 9×13 inch pan. Allow rising until doubled.
  • Bake at 190°C for 12 to 20 minutes. Serve warm.
