  • 30 ml 30 olive oil

  • 2 2 onions, peeled and finely chopped

  • 1 clove 1 garlic, finely chopped

  • 1 small handful 1 fresh sage leaves and thyme leaves

  • 160 g 160 eggplant chopped into cubes

  • 50 g 50 sunflower seeds roughly chopped

  • 500 ml 500 almond milk

  • salt and pepper to taste


  • Heat the olive oil In a pan over low heat and sauté the onions and garlic with the torn sage and thyme for 10 minutes.
  • Add the eggplant into the mixture stir and keep frying, add sunflower seeds to the mixture keep cooking for 5 minutes.
  • Add the milk and simmer for 5 minutes, add salt and pepper to taste and serve.
