Ingredients

  • Muffins
  • 500 g 500 cake flour

  • 4 teaspoons 4 baking powder

  • 15 g 15 poppy seeds

  • 3 ml 3 ground cinnamon

  • 125 ml 125 brown sugar

  • 15 ml 15 lemons zest

  • 125 ml 125 oil

  • 2 2 eggs

  • 185 ml 185 plain yoghurt

  • 60 ml 60 milk

  • Topping
  • 30 ml 30 brown sugar

  • 5 ml 5 ground cinnamon

Method

  • Muffins
  • Sift the flour, baking powder, and cinnamon, into a bowl. Stir in the poppy seeds, brown sugar and lemon zest.
  • Make a well a centre of the dry ingredients. Beat the eggs, oil, yoghurt and milk together. Pour into the centre of the dry ingredients and mix to just moisten. Fill three-quarters of a greased, deep muffin pan.
  • Sprinkle topping evenly over batter.
  • Bake at 200°C for 15 to 20 minutes or until baked.
  • Topping
  • Combine brown sugar and cinnamon.
