This recipe makes use of white carrots which are great for digestion. If you are looking for a way to bring veggies into a roast dinner, this recipe is the way to do it. When you roast carrots in the oven, it intensifies the flavour.

Alternatives to honey-glazed roasted carrots

This recipe is not only perfect for preparing white carrots, but you can also use it to prepare wedges of sweet potato, chunks of cauliflower or parsnips. It will be a roast meal like never before.

Roasted carrots with a sweet and sticky honey glaze make the perfect side dish.

Ingredients

  • 1 kg carrots

  • 2 tbsp of olive oil

  • 3 star anise

  • 3 cinnamon sticks

  • 4 cloves garlic, unpeeled and slightly crushed using the edge of a large knife

  • salt and pepper

  • 60 g of butter

  • 1 tbsp of sherry or balsamic vinegar

  • 2 tbsp of honey

Method

  • Preheat the oven to 190°C.
  • Peel the carrots, I like to leave them whole, but halve any large ones lengthways. Blanch in boiling water for 5 minutes.
  • Drain and transfer to a large baking sheet or roasting pan. The veggies must be in a single layer in the pan, or they’ll be soggy, steaming rather than roasting.
  • Drizzle with olive oil, and season well with salt and pepper. Toss to combine.
  • Sprinkle over the star anise, cinnamon and garlic cloves. Roast for 30 minutes.
  • While the veggies are roasting, make the honey glaze. Melt the butter in a saucepan, stir in the honey and vinegar and heat until the mix is just bubbling.
  • Remove the roasting pan from the oven, turn the carrots over and drizzle the honey glaze over them.
  • Return to the oven for another 10 minutes, until tender and golden.
