Little bits of heaven, that’s what you can call these cherry pecan chia energy bites. Loaded with dried cherries (or sultanas if preferred), nuts, chia seeds and more, these snacks are healthy and simply irresistible. One bite is all you need to give you a quick boost of energy during those busy days. You will be addicted, without a doubt.

Ingredients

  • ¾ cup ¾ rolled oats

  • ¾ cup ¾ coconut flakes

  • ½ cup ½ dried cherries

  • ½ cup ½ chopped pecans

  • cup mini chocolate chips

  • cup unsalted peanut butter

  • ¼ cup ¼ honey

  • cup chia seeds

Method

  • In a large bowl, combine all the ingredients until thoroughly incorporated. Chill the mixture in the refrigerator for 30 minutes.
  • Using clean hands, shape approximately two tablespoons of the mixture into a ball and place it on a baking sheet. Repeat the procedure until all the dough is used. Chill the energy bites in the refrigerator for 30 minutes.
  • Transfer to an airtight container and store in the refrigerator for up to 1 week.
