This recipe includes the method to prepare the bread rolls from scratch. What makes these bread rolls interesting is that you prepare the dough and filling separately. Then, roll the dough into balls, add a scoop of the filling inside and close the balls. Next, pop into the oven and bake to perfection.

Ingredients

  • 500 g 500 brown bread flour

  • 15 tablespoon 15 tablespoon instant dry yeast

  • 1 tablespoon 1 sugar

  • 2 teaspoons 2 salt

  • ¼ cup ¼ vegetable oil

  • cups water

  • 285 g 285 ground beef

  • 1 large 1 onion

  • 3 tablespoons 3 olive oil

  • 3 cloves 3 garlic, crushed

  • ½ teaspoon ½ salt

  • ½ teaspoon ½ black pepper

  • 1 teaspoon 1 thyme

  • ½ teaspoon ½ cumin

  • ¼ cup ¼ (35g) pine nuts

  • 1 1 egg

Method

  • Make the dough: In a mixing bowl place flour, yeast and sugar and mix.
  • Add salt, water and oil. Knead the dough for 7-8 minutes.
  • Transfer the dough to a greased bowl and let rise for 1 hour.
  • Meanwhile make the filling: over medium heat sauté the chopped onion for 2-3 minutes, add crushed garlic and sauté for 1-2 minutes more. Add ground beef, salt, pepper, thyme, cumin and pine nuts. Cook for 3-5 minutes, stirring constantly. Let cool.
  • Divide the dough into 16-20 equal pieces and shape each piece into a ball. Roll the balls into a 3-3.5″ (7-9cm) diameter circle. Place 1 tablespoon of the filling in the centre, close the dough tight and shape a ball.
  • Place all the balls in a baking tray, cover and let rest 20 minutes.
  • Preheat the oven to 180°C.
  • Brush the buns with egg wash. Bake 20 minutes.
