This appetising gingerbread loaf is ready in about one hour’s time. However, you need to allow the loaf to cool completely before serving it. What makes this pecan nut gingerbread loaf special is the nuts that add crunch to the mix.

Ingredients

  • 190 g semolina flour

  • 2.5 ml bicarbonate of soda

  • 2.5 ml ground ginger

  • 2.5 ml ground cinnamon

  • 1.25 ml all spice

  • 1 pinch of salt

  • 60 g vegetable shortening, softened

  • 70 g brown sugar

  • zest of 1 lemon

  • 125 ml molasses

  • 5 ml apple cider vinegar

  • 125 ml boiling water

  • 125 ml pecan nuts roughly chopped

Method

  • Sift together flour, bicarbonate, spices and salt.
  • Using an electric beater, cream the shortening and sugar together until light and fluffy.
  • Beat in the lemon zest gradually, add the flour mixture and beat until smooth.
  • Combine the molasses, vinegar and boiling water in a bowl and mix well.
  • Gradually stir this mixture into the batter and fold in the pecan nuts.
  • Pour the batter into the prepared baking tin and bake in the preheated oven for 30 to 35 minutes, until a skewer inserted into the centre comes out clean.
  • Remove from the oven and allow the gingerbread loaf to cool completely.
