Do you love having a warm plate of comfort food just like mom used to make? There is no food as good as a hearty beef stew. It’s a dish that always brings joy and caps the day off with all of the flavours you love. You can enjoy a great meal on your own or with family and this meal is a great example. The recipe is for a single serving but you can easily adjust it to feed your whole family too.

A great way to upgrade your beef stew is to brown the beef chunks before starting with the onions and other ingredients. Caramelising the beef adds depth of flavour. Remove the beef and start with the beef stew method below. When adding the liquids, make sure to scrape the browned bits from the bottom. The simmering time gives you the chance to work on the rest of the veggies and rice that goes along with your meal. Work on the cream spinach right at the end and serve warm for the tastiest results. Beef Stew with Yellow Rice, Creamy Spinach & Pumpkin Mash Recipe

  • 150 g 150 beef chunks

  • 4 4 peeled and chopped baby potatoes

  • 2 tbsp 2 olive oil

  • 1 clove 1 garlic, minced

  • salt and pepper to taste

  • 1 1 bay leaf

  • ½ ½ onion, chopped

  • 1 cup 1 beef broth

  • 3 tbsp 3 butter

  • 1 cup 1 long-grain white rice

  • 1 tsp 1 ground turmeric

  • ½ tsp ½ salt or to taste

  • 4 tbsp 4 unsalted butter

  • 1 1 onion, chopped

  • Pinch of nutmeg

  • ¼ cup ¼ all-purpose flour

  • ½ cup ½ heavy cream

  • salt and pepper, to taste

  • 1 packet 1 chopped spinach

  • 1 1 butternut squash, peeled and cubed

  • 1 tbsp 1 butter

  • 2 tsp 2 brown sugar


  • Beef Stew
  • Heat the olive oil in a large pot over medium heat.
  • Add the onions, garlic, bay leaf and stir for 2-3 minutes, until slightly browned then add beef chunks and beef broth, and let it simmer for 1 hour.
  • Add chopped potatoes and let it continue simmering for 30 minutes until beef and potatoes are cooked through or tender.
  • Creamy Spinach
  • Melt butter in a large saucepan over medium heat.
  • Add onion and nutmeg cook, stirring frequently, until onions are lightly brown.
  • Whisk in flour until lightly browned, about 1-2 minutes.
  • Gradually whisk in heavy cream and cook until the sauce has begun to thicken for about 5 minutes.
  • Season with salt and pepper, to taste.
  • Stir in spinach until well combined, about 1 minute.
  • Serve immediately.
  • Yellow RIce
  • Bring the rice to a boil for 10 minutes then remove from heat and wash rice by rinsing it with cold water 3 times.
  • After rinsing rice bring it back to a boil add 2 cups of water, butter, turmeric and salt let it simmer over low heat for 20 to 25 minutes and cover the pot with a lid and fluff with a fork and serve.
  • Pumpkin Mash
  • Boil squash cubes until tender, about 20 minutes.
  • Drain, then mash as you would for potatoes, then add remaining ingredients serve hot.
