Brisket used to be seen as a cheap cut of meat. Cooked right it can be deliciously tender and full of flavour. The secret is to cook it long and slow – making a good brisket takes time. This recipe is made in the oven but you can also slow cook your brisket over a fire.

To start off with the brisket is coated in a dry rub, then cooked in the barbeque sauce until the meat pulls apart with a fork.

Serve brisket with a side of coleslaw, mac and cheese or corn bread. Or shred the meat and pile onto rolls and make sliders!

A delicious beef brisket with a homemade barbeque sauce.

Ingredients – DRY RUB

  • 1 brisket, deboned

  • 2 tablespoon salt

  • 2 tablespoon paprika

  • 1 tablespoon garlic salt

  • 1 tablespoon cumin

  • 1 tablespoon black pepper

  • 1 tablespoon sugar

  • 1 tablespoon dry mustard

  • 1 bay leaf, crushed

  • 1 cup beef stock

  • 500 ml tomato sauce

  • 100 ml Worcestershire sauce

  • 75 ml lemon juice

  • 2 tablespoon vinegar

  • 4 tablespoon brown sugar or honey

  • 1 teaspoon mixed herbs

  • 1 teaspoon Tabasco sauce

Method – DRY RUB

  • Preheat oven to 180 degrees Celsius.
  • Make dry rub by mixing all the ingredients together in a small bowl.
  • Simmer all the sauce ingredients in saucepan for 15 minutes until the sauce thickens and reduces.
  • Season the raw brisket on both sides with the rub. Place in a roasting pan and roast, uncovered, for 1 hour.
  • Add the beef stock liquid and half of the barbecue sauce. Cover the pan tightly with tin foil and place back in the oven.
  • Reduce oven heat to 150 degrees Celsius and cook for 3 hours or until the brisket is fork tender.
  • To finish off, grill under hot grill for a few minutes to crisp the top.
