Our baked ice cream pudding is an unlikely dessert but is bound to add something new to your next dinner party.

Baked ice cream pudding tips

You will be making your vanilla ice cream custard from scratch with an easy recipe but you’re not going to churn it and you can freeze it when you’re done. You will top your ice cream dessert with some lovely fluffy egg whites for a tasty meringue topping. Serve your dessert warm or cold with a few sprinkled nuts, and a drizzle of chocolate sauce and you’re good to go.

Ingredients

  • 55 g butter

  • 2 eggs

  • 500 ml milk

  • 2 tbsp flour

  • 85 g sugar

  • 1 tsp vanilla.

Method

  • Cream the butter and sugar together, then add the yolks of eggs, flour and vanilla.
  • Boil the milk and pour over the mixture, return to the pan and cook for a few minutes until the contents thicken.
  • Pour into a pie dish, whip the whites of the eggs with a little sugar, and spread on top of the pudding and brown in the oven for a few minutes.
  • Can be eaten either hot or cold.
