It’s the stormy season in some parts of South Africa. Few days go by without some thunder and lightning in the heart of this beautiful country. This also means more nights spent indoors, listening to the sounds of storms brewing in the distance and the excitement of lightning just outside your window. Why not enjoy the experience with a delicious gin cocktail? The Stormy Monk is the perfect drink for a night in during a storm or relaxing next to the pool when the clouds clear up.

The Stormy Monk uses the award-winning MONKS Medella gin which is infused with blueberries, giving it some great character. Adding pomegranate juice, lemon juice and homemade Monks Medella simple syrup completes this tasty treat. The MONKS Medella syrup is easy to make and can be used in a variety of cocktails. It is infused with fresh thyme and blueberries, giving it a very unique flavour. This syrup also lasts a month in the fridge, so you can make it once and enjoy it as often as you like. The cooking and resting times below include making the simple syrup. The cocktail itself takes less than 3 minutes to make.

Ingredients

  • 50 ml 50 MONKS Medella (Blueberry infused gin)

  • 12.5 ml 12.5 MONKS medella syrup

  • 50 ml 50 pomegranate juice

  • 12.5 ml 12.5 lemon juice

  • MONKS Medella Syrup
  • 500 ml 500 water

  • 500 g 500 brown sugar

  • 500 g 500 blueberries (fresh or frozen)

  • 50 g 50 fresh thyme

Method

  • Add the MONKS Medellla gin, pomegranate juice, lemon juice, MONKS Medella syrup and ice into a cocktail shaker. Shake for 30 seconds.
  • Serve in a tumbler or rocks glass with a garnish of Fynbos.
  • If you want to impress, add a block of dry ice for a real smokey affect.
  • MONKS Medella Syrup
  • Add all of the ingredients to a pot. Bring to the boil and then turn down the heat and let simmer for 10-15 minutes.
  • Once it has simmered allow to sit for at least an hour until relatively cool.
  • Use the back of a wooden spoon (or masher if you have one) and mash the berries and thyme until you reach a pulp-like consistency.
  • Strain the mixture into a glass bottle of your choice.
