Do you love curry? In South Africa, the Eastern coast, mostly Durban had an influx of people from South East Asian countries who brought their amazing food with them. Combine amazingly aromatic flavours with fresh seafood found along the coast to create this tasty winter prawn curry. It’s best enjoyed with the whole family and a healthy amount of naan bread, basmati rice or both. It’s a heartwarming meal you can enjoy any day of the week.

Flavours are enhanced by toasting half of the aromatics, garlic, cumin, coriander and garam masala, with the onions. Prawns or shrimp can be fully cleaned or you can leave some shells on if you like texture. The prawns cook quickly so the sauce is mostly cooked on its own. Add as much chilli as you want to, depending on flavour but know that seafood always somehow seems spicier than other proteins.

Ingredients

  • 1 kg Prawn meat

  • 1 tbsp butter

  • 3 tbsp oil

  • 1 Onion, finely chopped

  • 4 cloves Garlic, crushed

  • 3 Bay leaves

  • 1 tsp coriander seeds, groundSalt to taste

  • 1 tsp Cumin seeds

  • 2 tsp garam masala

  • 5 large tomatoes, grated or finely chopped OR 1 tin tomatoes

  • 1 tsp ginger, fresh or ground

  • 1 tsp Tumeric

  • 2 tsp chilli powder

  • 4 fresh curry leaves

  • 2 tbsp brown sugar

  • fresh coriander

  • green chillies (to taste)

Method

  • Heat butter and oil in a pot.
  • Saute the onions, garlic, bay leaves, cumin and coriander, garam masala until onions are soft, about three minutes.
  • Add the tomatoes, turmeric, ginger, curry leaves and chilli powder. Season with salt and pepper.
  • Add the brown sugar.
  • Simmer for about 20 minutes.
  • Add prawns, stir and let simmer for about 8 minutes.
  • Garnish with fresh coriander and desired amount of green chillis.
  • Serve with rice, roti or naan bread.
