You always see stacks of flapjacks or pancakes in movies and always wonder how anybody can eat that much. These pancakes are light and fluffy with a hit of cinnamon and sweet apples topped with bananas. It’s a rich and tasty brunch indulgence or dessert after dinner with the family.

Making your Wholewheat apple & cinnamon flapjacks

You probably have most of the ingredients like flour, apples, bananas, yoghurt, honey, milk, lemon juice and egg yolks in your home to make this fluffy meal. Peaked egg whites help your flapjacks stay nice and puffy so don’t worry about the thick batter. It ends up tasting like apple crumble pie with bananas which is a sweet dessert you can have for brunch. You can add some chocolate syrup or strawberries to the party as well.

The recipe makes the fluffiest flapjacks ever. Top with caramelised banana, you have a real treat on your hands.

Ingredients

  • 1 cup wholewheat flour

  • 3 tsp baking powder

  • 1 lemon, squeezed

  • 3 apples, diced into small cubes

  • 1 tbsp cinnamon

  • 1 cup plain Greek yoghurt (or any flavour of choice)

  • 1 tbsp honey

  • 2 eggs

  • INGREDIENTS – TOPPING
  • 3 diced bananas

  • 1 tbsp butter

Method

  • Place the apples in a microwave-safe bowl. Heat in the microwave for four minutes or until cooked.
  • Sift the flour, cinnamon and baking powder together.
  • In another bowl, mix the yoghurt, honey, milk, lemon juice and egg yolks. Combine the yoghurt mixture with the dry ingredients until smooth. Make sure not to overmix.
  • Beat egg whites to a soft peak and gently fold them into the batter. It will be a thick batter, but they make the fluffiest flapjacks!
  • Cook two spoonfuls of batter at a time, for two minutes on each side in a lightly greased pan over medium heat. When the batter starts to make holes, carefully flip them over. Flip again and cook until lightly golden. If the batter is too thick, add tablespoon of milk at a time to thin the batter.
  • METHOD – TOPPING
  • While frying the flapjacks, heat a frying pan, add more butter and add the diced bananas in the butter until it starts to caramelise. There is no need to add sugar as the bananas are sweet enough.
