Sweetcorn bake with maize meal – The ultimate braai side dish

If you love a braai as much as the rest of South Africa, you probably light a fire at least once a week. Level up your braai experience with this savoury sweetcorn bake with maize meal. It is the ultimate braai side dish.

This sweetcorn bake is basically a maize meal tart with a twist. Whip it together in about one hour and you have a deliciously satisfying side dish to serve with the succulent meat sizzling on the braai.

The combination of creamed sweetcorn, kernel corns, chickpeas, maize meal and other fragrant ingredients result in a mouth-watering dish that will make everyone around the table reach for the serving spoon more than once.

  • 1 cup maize meal

  • ¾ teaspoon baking powder

  • 2 eggs

  • cup buttermilk

  • ¾ cup butter, melted

  • 1 tin creamed sweetcorn

  • 1 tin kernel corn, drained

  • 1 tin chickpeas, drained and roughly chopped

  • 1 cup onions, finely diced

  • ½ cup red pepper, finely diced

  • 1 ½ cup cheddar cheese, grated

  • salt and pepper to taste


  • Preheat the oven to 180°C.
  • Butter an oven dish or use cook and spray.
  • Mix the maize meal and baking powder together.
  • Whisk the eggs, buttermilk and butter together.
  • Add the creamed corn, kernel corn, chickpeas, onions and red pepper.
  • Stir into the dry ingredients and fold over until just moistened.
  • Pour half the mixture into the baking dish and sprinkle with half of the grated cheese.
  • Add the remaining batter and smooth out, sprinkle the remaining cheese on top.
  • Bake uncovered for 45 minutes until firm.
  • Let it stand for 10 minutes before serving.
