Decadent Chocolate Mousse With Cream and Strawberries

Chocolate mousse is such a versatile dessert, you can use it to ice cakes and cupcakes, layer puddings or even enjoy it on its own. What makes this chocolate mousse sugar-free is the replacement of regular milk chocolate with a minimum of 70% dark chocolate and replacing castor sugar with xylitol.

These are the two main ingredients for providing the heavenly chocolate flavour and sweetness you want in a chocolate mousse, respectively:

  • Dark chocolate is a great source of antioxidants making this chocolate surprisingly good for you.
  • Xylitol too, has health properties, such as having a low GI and it’s naturally good for your teeth.

Ingredients

  • 200 grams dark chocolate

  • 30 ml of xylitol

  • 4 egg whites

  • 1 egg

  • 15 grams butter

  • 500 ml unsweetened whipped cream

  • strawberries for garnish (optional)

Method

  • Melt the chocolate in a heatproof bowl over simmering water. Make sure the water does not touch the bottom of the bowl directly.
  • Add the butter to the melted chocolate and remove off the heat, stir the mixture until the butter melts. Set aside to slightly cool.
  • Add one egg to the chocolate mix and stir in. Note: the mixture might become more solid.
  •  In a mixing bowl whisk the 4 egg whites until stiff peak and add the xylitol gradually.
  • Add a 1/4 of the egg whites to the chocolate and stir in to loosen the mixture. Slowly fold in the remaining egg whites.
  • Fold in 250ml of the whipped cream until the ingredients are combined and the mousse is one consistent colour.
  • Fill four wine glasses with mousse and remaining cream as desired.
