South African biltong pâté: The perfect starter to any braai this weekend

Biltong, the South African version of cured meat so iconic that it’s fully part of our culture. Maybe due to the great quality of meat we have in this country, but it’s also about the curing. We either love it very dry or the biltong equivalent of medium rare with a crust of goodness. However, you can turn it into something different and tasty to go with your braai day snacks. Our South African biltong pâté is the perfect condiment for salty crackers for a starter.

If you use pink or green peppercorns, know that they have specific flavours and the pink goes beautifully with this biltong pâté. Cream cheese and mayonnaise are the base of this great snack. Serve alongside salty crackers or toasted crusty bread or even just fresh bread as it will always be delicious. You can even use it as a chip dip for the game.

Ingredients

  • 50 g 50 full-cream smooth cream cheese with chives

  • 30 ml 30 mayonnaise

  • 30 ml 30 lemon juice

  • 30 ml 30 wholegrain mustard

  • 30 ml 30 pink, green or black peppercorns, crushed (bottled)

  • 125 ml 125 grated biltong

  • black pepper to taste 

Method

  • Combine all ingredients in a bowl.
  • Mix well, using a fork.
  • Divide between jars and seal them.
  • Serve with Portuguese bread or any other bread of your choice.
