Everybody’s busy and having breakfast is often not at the top of everybody’s list of things to do. However, there are ways to make your breakfast so tasty that you can’t help but make it and eat before getting your day started. The other great party of this savoury mince toast breakfast is that you can make everything a few days in advance while making toast and frying an egg to put on top. It’s also a recipe you can get creative with or just use last night’s leftovers.

The mince recipe is very easy to make and of course adds loads of protein to your diet for the day along with the egg which also provides Vitamin B and fat to your meal. You can also make your favourite curry mince for this recipe or use last night’s leftovers. Whenever you do make the mince, it stores very well in the fridge or freezer. It’s a perfectly healthy breakfast that will get you out of bed in the morning along with your cup of coffee.

Ingredients

  • 500 g 500 lean mince

  • ½ tsp ½ crushed garlic

  • 1 tsp 1 tomato paste

  • ½ tsp ½ mixed herbs

  • 1 1 chopped onions

  • 1 tsp 1 butter

  • 100 ml 100 water

  • 1 tsp 1 chopped parsley

  • 1 1 cubed potato (optional)

  • BBQ spice

  • salt & pepper

Method

  • In a saucepan, heat the butter. Fry the onions, garlic and herbs for a few minutes. Add the mince. Brown the mince.
  • Add the water and canned tomatoes. Simmer for 20 minutes on medium heat.
  • Serve on a slice of toast with a fried egg on top. Garnish with parsley.
