Every family has a king or queen of delicious braai sides. One of those iconic sides is often potato salad and if you’re somebody who loves this dish, get ready for another great recipe. Our rustic potato salad doesn’t reinvent the wheel, but will be a hit with your family and friends this weekend. With this one, you can leave those potato skins on and add some of your favourite ingredients.

Rustic potato salad suggestions

Our recipe goes all-in on the classic additions without the eggs. Leaving the skins on the potatoes can add some texture while the potato water from boiled potatoes will help thicken the mayonnaise sauce. Add some green peppers, garlic or even some scattered bacon bits for something extra special. You’re welcome to get as creative as possible with different ingredients and you can use sweet potatoes too.

Ingredients

  • 6-8 small potatoes boiled in the skins

  • 2 tbsp potato water

  • ½ tsp vinegar

  • 1 tbsp chopped parsley

  • 1 small onion, chopped

  • ½ cup mayonnaise

Method

  • Boil potatoes for about 20 minutes or until tender.
  • Peel and thinly slice potatoes thinly.
  • Place potatoes in a bowl, in layers, alternating with sprinkling of hot stock and vinegar, parsley and onion
  • Layer with mayonnaise and pour over the top. Mix well.
  • . Place in dish for serving and garnish with shredded lettuce and parsley sprigs.
