Putting together a tasty dessert doesn’t need to be that difficult. Sometimes, a recipe comes along that embraces nostalgia and combines memories and desserts to make something special. This peanut butter marshmallow treat is a tray of delicious butterscotch and marshmallows that you’ll enjoy sharing with friends and family. These treats are great for family parties as well as bake sales at your kid’s school on the weekend.

Peanut butter marshmallow treat tips

You can either melt the butterscotch sweets in the microwave but if you want to control the process more, use a double boiler which will melt more gradually. The marshmallows won’t melt like the sweets, so when the treats harden in the fridge, the texture will be glorious with soft marshmallow and chewy butterscotch. To get a bit creative, add some fine coconut over top and you can also add some crushed nuts into the mixture too.

Ingredients

  • 2 cups 2 butterscotch toffees

  • 1 cup 1 smooth peanut butter

  • 4 tbsp 4 unsalted butter

  • ½ tsp ½ vanilla extract

  • 1 pinch 1 salt

  • 1 bag 1 mini marshmallows (rainbow or regular)

Method

  • Prepare an 20cm square baking pan by spraying with cooking spray and lining with parchment paper.
  • In a glass bowl in the microwave, melt butterscotch toffees and peanut butter together until smooth, stirring in between.
  • Stir in the vanilla and pinch of salt and allow the mixture to cool to room temperature.
  • Once cooled, stir in marshmallows and mix till combined.
  • Pour mixture into prepared pan and refrigerate until set (about 2 hours).
  • Cut chilled bars into squares and serve.
