What’s the one side dish you can’t do without at a braai? If you love a good potato bake, you’re right and this mashed potato casserole is a great twist on the classic dish. Potatoes are the most versatile food which is great when mashed with butter and cream but adding cheese makes it even better. This casserole is also very versatile and you can come up with your own combinations which will be just as delicious.

Mashed potato casserole tips

The potatoes are par boiled until soft and you don’t want to over-mash at the start as it’s easier to mix everything together when it’s not too smooth. You can then either keep it slightly rustic or make it smooth before baking. You can choose your choice of cheese for the top for beautiful browning and even add some bacon or chorizo for some smokey pork which we all love. This recipe is also great with sweet potatoes and best served with braaivleis.

Ingredients

  • 4-5 large 4-5 potatoes

  • 115 g 115 goat cheese

  • 3 tbsp 3 butter

  • 1 cup 1 sour cream

  • ¼ cup ¼ milk

  • ½ cup ½ shredded Parmesan cheese

  • ½ tsp ½ salt

Method

  • Peel the potatoes and cut them into medium pieces. Place them in a pot and cover with water. Boil the potatoes, cooking them until they are soft. Then, drain the liquid out and place the potatoes into a mixing bowl.
  • Using a masher, give them a rough mash. Then, add the goat cheese, butter, sour cream, and salt. Mash thoroughly, making sure to fully incorporate all the ingredients throughout.
  • Add the milk and then mash again until the potatoes have a smooth and creamy texture.
  • Spoon the mashed potatoes into an oven-safe casserole dish and then sprinkle the Parmesan cheese on top.
  • Bake at 180°C for 40 minutes. Once a golden-brown crust has formed, remove it from the oven and serve.
