The mousse can be used as a lovely alternative to breakfast or as a summer dessert. The various textures when spooning through the layers make it a joy to eat.

This recipe includes several healthy ingredients such as lemons, honey, natural yoghurt and granola. So not only is it delicious, it is guilt free too!

Lemons are almost in season so using fresh lemons, instead of lemon juice, will give you the added nutritional benefits. Lemons contain a high amount of vitamin C and soluble fibre which is perfect to boost your immune system. Honey contains powerful antioxidants and is a great healthier substitute for sugar.

Making the mousse might seem like a bit of effort but it is totally worth it. You will not be dissapointed with the amazing flavour!

  • 400 grams natural yoghurt

  • 9 leaves gelatine

  • 6 egg whites

  • 400 grams cream, whipped

  • 175 grams sugar

  • 400 ml lemon juice

  • 200 grams honey

  • 400 grams chopped fruit of your choice

  • 200 grams muesli


  • Beat the egg white and sugar to form a meringue mixture.
  • Add the gelatine to water and dissolve. Then add to the yoghurt. Add the lemon juice to the yoghurt.
  • Mix in the meringue and fold in the semi whipped cream.
  • Leave to set for at least 12 hours.
  • When ready to serve, add a layer of mousse, followed by a layer of granola and fruit. Keep layering until the glass is full.
