Lemon cake is a classic tea-time treat and our Lemon Cake & Citrus Icing is as pure as the friendship you share with your favourite people. We can all agree that lemon cake needs to be moist and still have that caramelised crust with a soft lemon icing on top.

We want to celebrate the beautiful citrus we have here in South Africa. The cake is super easy to put together and will come out perfectly every time. You can enjoy each slice as it is or add your own twists. Why not put out some strawberries or other sweet fruits for everybody to choose from? Decorate the cake with some of these fruits for a great presentation. It’s the best treat to enjoy with your friends during the holidays and they’ll always want to come back for more.

Lemon Cake & Citrus Icing Recipe

  • 1 ½ cups 1 ½ flour

  • ½ tsp ½ baking soda

  • ½ tsp ½ baking powder

  • ½ tsp ½ salt

  • 3 whole 3 eggs

  • 1 cup 1 sugar

  • 2 tbsp 2 soft butter

  • 1 tsp 1 vanilla essence

  • 1 tsp 1 lemon zest

  • cup lemon juice

  • ½ cup ½ coconut oil

  • 1 cup 1 icing sugar

  • 2 tbsp 2 milk

  • 1 tsp 1 lemon juice


  • Preheat oven to 350°F /180 °C.
  • Prepare baking tin, +/- 13cm x 23cm, line it with baking paper and spray with Cook and Spray. 
  • Sift the flour, baking soda, baking powder and salt and add to a medium mixing bowl.
  • Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon zest and lemon juice.
  • Pour wet ingredients into the dry ingredients and blend carefully until smooth.
  • Add oil and mix well.
  • Pour batter into a well-greased loaf pan.
  • Bake for 45 minutes or until a toothpick stuck into the centre of the cake comes out clean.
  • Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed.
  • While the loaf has cooled off, remove it from the pan and frost the top with the icing.
  • Let the icing set before slicing.
