As summer hits South Africa, our rugby team goes abroad for some fun, our cricket team is making waves in all formats. And here you are, looking for snacks to enjoy the games. There is one snack that is universally known as the ultimate game day feast and it isn’t wings. Game Day nachos has everything you need for a delicious feast as you watch your team dominate. Every time you bring them out, cheers fill the room, not for you, but for the food on the table and everybody is happy.

Try and find authentic Mexican tortilla wraps or nacho chips that won’t get all soggy when you stack them. The meat sauce is close to the usual one you make for the week. Toppings include pickled jalapeno chillies, sour cream, avocado and lots of cheese. You can even make your own spicy guacamole with avocado, chillies and other salsa ingredients. Layer, stack and provide the best game-day snack with these Game Day Nachos.

Ingredients – NACHOS

  • 6 6 soft flour tortilla’s ( I use the Mexicorn Soft Flour Tortilla Wraps)

  • 3 tablespoons 3 olive oil

  • 1/2 teaspooon 1/2 rosemary

  • salt and pepper to taste

  • INGREDIENTS – MEAT SAUCE
  • 1 small 1 onion, finely chopped

  • ¼ ¼ green pepper, finely diced

  • ¼ ¼ red pepper, finely diced

  • 2 cloves 2 garlic, finely diced

  • 300 g 300 lean mince

  • 1 tbsp 1 curry powder

  • 1 can 1 chopped tomato (1 can)

  • 1 tbsp 1 tomato paste

  • salt and pepper to taste

  • TOPPINGS
  • fresh parsley and/or cilantro

  • 100 g 100 grated cheese

  • 100 g 100 grated mozzarella

  • 3 tbsp 3 sour cream

  • 4 -6 4 -6 pickled jalapeno chillies, finely chopped

  • 1-2 1-2 avocado (sliced or mashed)

Method – NACHOS

  • Preheat your oven to 180°C.
  • Combine the olive oil, garlic, rosemary and salt and pepper in a large mixing bowl and stir well.
  • Cut each of the flour tortillas into eight large triangles (or whatever shape you prefer)
  • Place the tortilla pieces into the bowl with the olive oil mix well to ensure that all pieces are lightly coated- it helps to use your hands.
  • Line and/or grease a large baking tray with wax paper and spread the tortilla pieces onto the baking tray.
  • Toast the tortillas in the oven for 5-8 minutes, or until golden and crisp.
  • METHOD – MEAT SAUCE
  • Sauté the onion, pepper and garlic in a large saucepan on medium heat with a tablespoon of olive oil, until soft.
  • Add the beef mince to the saucepan, and cook until brown.
  • Add the curry powder, salt and pepper and stir well.
  • Add the tomato paste and stir well.
  • Add the can of tomatoes and combine well, reduce the heat and let the sauce simmer for 10-15 minutes or until the tomatoes are nice and soft and well combined with the meat.
  • TO ASSEMBLE
  • Arrange the tortilla chips on a large, ovenproof serving dish or plate and create a small well in the centre (it helps to place a small bowl or a large ball of tin foil to help retain the shape).
  • Sprinkle the grated cheese on top of the tortilla chips and melt. (You can either use a microwave, broiler or place it in the oven on high heat for 2-5 minutes)
  • Remove the bowl or tinfoil from the centre, and spoon the meat sauce on top.
  • Sprinkle the pickled jalapenos over the tortilla chips and cheese.
  • Dollop the sour cream on top of the meat sauce, and sprinkle the fresh parsley and/or cilantro on top. Serve with some guacamole or mashed avocado.
