The warm weather has come early here in South Africa and pool parties with poolside drinks are the order of the day. You need a drink that will cool you down while keeping you hydrated. It also needs to look the part and we have just the cool-down drink you need. Our Frozen Whipped Coconut Lemonade ticks all the right boxes for a great summer’s drink with friends and family while relaxing by the pool.

Even though this delicious Frozen Whipped Coconut Lemonade is so easy to prepare, it’s all about timing. Freeze the coconut milk the day before as it needs to stay cold. It doesn’t freeze completely, which will help when it comes to whisking. Immediately add the coconut milk to your ice cube trays and freeze again before the final steps. This drink melts and separates quite quickly, but you’ll love it so much, that it will be done before that happens.

Ingredients

  • cup raw honey or pure syrup

  • ½ cup ½ freshly squeezed lemon or lime juice

  • 1 cup 1 full-fat organic coconut milk (from a can)

  • 2-½ cups 2-½ ice cubes

Method

  • For a creamy and slushy whipped lemonade, freeze your coconut milk the day before.
  • Simply whisk the coconut milk into a bowl. Whisking your milk first is important because coconut milk naturally separates. Immediately pour it into an ice cube tray and freeze overnight.
  • Once the coconut ice cubes are completely set, pop them into your high-speed blender or food processor. Into the blender, add in the fresh-squeezed lime or lemon juice, honey and additional ice cubes.
  • Blend on the high speed, stopping to scrape the sides if necessary for a few minutes until just nice and slushy, serve immediately as your lemonade will only stay this perfect slushy for about 10 minutes.
