You’ve seen movies and TV shows with big stacks of pancakes or flapjacks doused in butter and honey. Well, you can make some easy flapjacks too and they’ll be even better than you can ever imagine. In South Africa, flapjacks are fluffy pancakes you often find in the USA. We might not stack them like they do in the movies, but you definitely can with this recipe which is best served to a hungry family.

Easy flapjacks suggestions

If you want even bigger and fluffier flapjacks, separate the eggs and make them in a similar way. However, the egg whites get beaten into peaks before being lightly folded into the rest of the mixture. The big spoon-fulls of dough will make super fluffy pancakes. Go classic with toppings like cinnamon sugar or honey and butter. You can also add fruits or go the savoury route with some bacon with a sweet maple syrup still making a cameo.

Ingredients

  • 3 3 eggs

  • 125 ml 125 sugar

  • 250 ml 250 milk

  • 2 tbsp 2 melted butter

  • 2 cups 2 flour

  • 4 tsp 4 baking powder

  • 1/2 tsp 1/2 salt

  • 50 ml 50 cooking oil

Method

  • Beat the eggs and sugar. Drizzle the melted butter into the mixture. Mix the dry ingredients gradually with the milk. Do not over mix.
  • Heat a frying pan on medium-low heat, to prevent flapjacks from getting overly brown. Add a tablespoon of oil.
  • Pour heaped spoonfuls of the dough in the hot pan. Not more than 4 at a time. When the flapjack forms a bubble and pops, turn them over.
  • Served the flapjacks with butter, syrup, honey, bacon, berries or cheese.
