Disco chips: Indulge in some cheesy bacon fries

In the 80s, people were up late as we are today and needed snacks before going home and shops started selling fully-loaded fries which became known as disco chips. They are fluffy and crunchy fries covered in cheese and bacon which was the most popular option. But, you can make them at home, either for your own midnight snack or to enjoy with burgers, steak or just for as a treat with the rugby game on the weekend.

Disco chips suggestions

If you’ve got the time and want to upgrade the fries, boil your sliced chips until half done before drying them and letting them rest in the fridge. If you’ve done this overnight, you’ll only need to fry them up the day you’ll be serving them. When making your bechamel cheese sauce, make sure it’s well-seasoned and you can also add some different seasonings to your chips after frying. The crunchy bacon bits and cheese sauce smothering the chips are incredibly indulgent and you should enjoy them without any guilt.

Ingredients

  • 6 medium 6 potatoes (sliced and chipped)

  • 500 ml 500 cooking oil

  • salt & pepper

  • 1 cup 1 diced bacon

  • 1 cup 1 mozzarella cheese

  • 15 ml 15 parmesan cheese

  • 1 1 onion, diced

  • 1 tsp 1 crushed garlic

  • 1 tbsp 1 butter

  • 1 tbsp 1 flour

  • 200 ml 200 milk

Method

  • Heat the oil in a saucepan. Meduim heat. Add the chips which have been thoroughly dried. Cook until crispy and brown. Drain the excess oil.
  • In a saucepan, heat the pan and add the bacon. Fry the bacon until crispy. Add the onion and garlic. Fry for 5 minutes. Place the bacon and onion in a bowl.
  • Using the same saucepan, heat the butter, add the flour. Make a paste. Add the milk gradually, whisking constantly until a thick sauce. Add the cheeses and keep whisking until incorporated.
  • Add the bacon mix to the sauce. Pour over the chips and enjoy.
