This must be the ultimate baked Milk Tart (Melktert) recipe and you cannot get a more traditional Milk Tart Recipe.

Ingredients

  • Crust
  • 125 g 125 butter

  • ½ cup ½ sugar

  • 1 1 egg

  • 2 cups 2 flour

  • teaspoons baking powder

  • ½ teaspoon ½ salt

  • 2 tablespoons 2 oil

  • 5 ml 5 vanilla essence

  • Filling
  • 1 litre 1 milk

  • 6 6 eggs

  • 4 tablespoons 4 butter

  • 1 cup 1 sugar

  • 105 g 105 maizena

  • 100 g 100 flour

  • ¾ teaspoon ¾ almond essence

  • salt

Method

  • Preheat the oven to 204°C – 230°C.
  • Crust
  • Cream the butter and sugar.
  • Add the oil and then the egg and vanilla essence.
  • Finish off by adding flour, baking powder and salt.
  • Filling
  • Boil the milk and add the butter.
  • Mix the maizena with a little bit of milk to form a thin paste in a separate bowl.
  • Add the flour and maizena mix to the boiled milk mixture.
  • Separate the 6 eggs.
  • Whip the egg yolks with the sugar then add to milk.
  • Whip the egg white, but not too stiff. Then, add to the milk mixture.
  • Add the almond essence.
  • Pour the milk tart filling into the crust and bake for 15 – 17 minutes in the preheated oven.
