If you’re a South African, you know all about potjiekos. It’s the name given to beef shin stew made in a tripod cast-iron pot on a fire or gas burner. It’s a slow-cooked, rich stew made for a big crowd of hungry people. It’s also one dish that’s often entered into competitions due to the variations, cooking times and occasions. It’s a big meal for a hungry crowd of people and great in the place of a Sunday roast, especially with Mother’s Day coming up.

Making your classic beef potjie

If you’re strapped for time, this recipe doesn’t take hours to prepare but you can easily cool the heat down a bit and let it simmer for as long as you want to. Browning the meat first creates the maillard reaction which caramelised the meat and deepens the flavour. The rest of the potjie is all about layering. When using an open fire, make sure that the heat is consistent. If you’re cooking for a long time instead, the heat should be less and the water should be at a low simmer.

Ingredients

  • 1 kg beef shin

  • 2 large onions

  • 2 cloves garlic, crushed

  • 3 roughly chopped carrots

  • 6 medium potatoes, peeled and sliced

  • 1 red or green pepper

  • 2 tsp mixed herbs

  • 30 ml oil

  • 750 ml hot water

  • 1 tsp sugar

  • 15 ml vinegar

  • 2 tsp barbeque spice

  • 100 ml tomato sauce

  • 50 ml cream

Method

  • Place your size 3/4 tripod potjie over hot coals, or gas potjie stand.
  • Heat the oil. Add the onions, peppers and garlic. Fry them till soft. Remove from the pot and set aside.
  • Add the meat to the pot and brown. Season with salt and pepper to taste.
  • When the meat is browned, add 500ml of the hot water to your pot. Cover the lid and simmer for 30 minutes.
  • Add the chopped vegetables.
  • Mix the rest of the ingredients, except the cream, with the remaining 250ml hot water. Add to your pot. Close the lid.
  • Simmer for 25 minutes. Do not stir the pot.
  • Remove from the heat, add the fried onions/peppers and add the cream.
  • Serve with rice or samp.
