You’ve been walking through malls and smelled those freshly baked cinnamon buns wafting through the halls. The urge to go and buy them is strong but they are often overpriced and a little bit stale if you don’t get there at the right time. These homemade fluffy and rich cinnamon buns will not set you back too much and they have all of the fresh ingredients you’re looking for. Your home will also smell absolutely incredible.

Dough like this is often best made at home as the freshness will keep it light and fluffy. The cinnamon filling can be as evenly spread and thick as you want it to be. The smooth and sweet icing will cover the buns and you can have as much as you want to as well. Each bit of this recipe is controlled by you and you can even add some chocolate glaze and sprinkles on top if the imagination runs wild. They’re best enjoyed with a cup of tea or coffee.

Ingredients

  • For the dough
  • 1 cup 1 warm milk

  • 2 2 eggs, room temperature

  • cup butter, melted

  • 4 ½ cups 4 ½ flour

  • 1 tsp 1 salt

  • ½ cup ½ white sugar

  • 1 package 1 yeast

  • For the cinnamon filling
  • 1 cup 1 brown sugar

  • tbsp cinnamon

  • ¼ cup ¼ butter, softened

  • For the icing
  • 85 g 85 cream cheese, softened

  • ¼ cup ¼ butter, softened

  • cups icing sugar

  • ½ tsp ½ vanilla extract

  • tsp salt

Method

  • Microwave the milk for 60 seconds. Make sure it is lukewarm and not too hot.
  • Dissolve the yeast in the warm milk in a large bowl. Add sugar and allow yeast to froth. This take approximately five minutes.
  • Add butter, eggs, flour and salt. Mix well.
  • Dust your hands with flour and knead the dough for 7 minutes.
  • Place the dough in a greased bowl and cover tightly with plastic wrap. Allow to rise in a warm place for 1 hour or until the dough has doubled in size.
  • For the cinnamon sugar filling
  • In a bowl mix the brown sugar and cinnamon.
  • Sprinkle a little bit of flour on a surface. Roll the dough ball out into a rectangle, roughly 40 cm x 55 cm and 5 cm thick.
  • Spread the dough with the softened butter.
  • Sprinkle the cinnamon sugar filling evenly over the butter.
  • Roll up the dough, starting with the longer side.
  • Cut into 14 cinnamon rolls.
  • Place the cinnamon rolls in a greased baking dish.
  • Cover the dish with tin foil and allow the rolls to rise until nearly double in size (approximately 30 minutes).
  • Preheat oven to 180°C.
  • Once the cinnamon rolls have risen, bake in the preheated oven for 20 minutes.
  • For the icing
  • While the cinnamon rolls are baking, make the cream cheese icing.
  • Beat the cream cheese, butter, icing sugar, vanilla essence and salt.
  • Remove the cinnamon rolls from the oven and spread the icing over the warm cinnamon rolls.
