When there’s leftovers, your first thought should be fried rice. Our chow faan fried rice recipe is simple and provides the perfect base for creative cooking.

You don’t always want to stand around cooking for hours and often have all kinds of leftovers in the fridge. If you have leftover rice from a few days ago and other small bits, you can make fried rice. Chow faan, also known as Chinese egg-fried rice is the way to go and it’s so simple. You can also make a large batch of fried rice if you’re cooking many meals for the week and you can always add what you have left.

Chow faan fried rice tips

This is one recipe where having leftover rice is actually a necessity. The older rice dries up slightly and absorbs the sauce and flavours you add to it. You can of course make everything in a hot wok and add the rice, but leftovers will do. Our recipe has some peas, ham and spring onion but you can substitute with bacon or even bits of pork with other great veggies. Peppers, soy sauce and green beans are great additions.

Ingredients

  • 6 cups 6 cooked white rice

  • 4 4 eggs, beaten

  • ½ cup ½ cooked peas

  • spring onions, chopped

  • diced ham

  • salt

  • freshly ground black pepper

Method

  • Heat all of the ingredients in a pan or wok.
  • Add rice and warm through.
  • Add the eggs and keep mixing for your desired consistency.
