Anyone for a hot pasta dish steaming with flavour and loaded with gooey cheese? That’s just what we need on a cold winter’s day. This chicken and pasta pot ticks all the boxes for a comfort meal.

With most of South Africa experiencing a temperature drop this week, we all need a flavour-packed meal that will warm us from the inside out.

If you are brave enough to face the cold, you can prepare this chicken and pasta pot outside in a cast iron pot on the braai. Make sure the coals are not too hot but have some coals ready to add when needed.

If you prefer the warmth of your kitchen, make it on the stove in a cast iron pot with a flat surface.

Ingredients

  • 1 kg chicken breasts, boneless or chicken portions (about 12 pieces) cut in small chunks

  • ½ punnet of mushrooms, sliced

  • 1 large onion, diced

  • 1 red pepper, diced

  • 1 green pepper, diced

  • 1 packet Cook in sauce mushrooms and wine flavour

  • 500 g pasta rice

  • 250 ml coconut cream or milk

  • olive oil

  • 1 cup grated cheddar cheese

  • 2 tomatoes, sliced

  • black pepper

Method

  • Heat the pot and add the olive oil. 
  • Sauté the onions, red and green pepper until lightly golden brown, add the chicken pieces, brown them lightly.  
  • Add the mushrooms and mix well. 
  • Pour in The Cook in Sauce and add water until covered. 
  • The pasta rice must be added to this mixture, mix well and cover.  Keep on a low heat for 45 min to 1 hour or until the pasta is cooked. Remove from the heat.
  • Stir in the cream, sprinkle the cheddar cheese over the top and place tomatoes on top of the cheese. 
  • Grind with black pepper and place under the grill if you are making it on the stove, or otherwise add hot coals on the lid for 30 minutes.
