South African summers are still filled with lots of sports days, especially when the Springboks tour at the end of the year. It turns our weekends into feasts with friends that include loads of snacks and food that makes us happy. Biltong is one of our favourite snacks because we just make it so well, but have you ever had it with bread? Our cheesy cheddar and biltong bread is a true homemade treat that you can enjoy during the game or as a braai side.

The bread dough is a simple recipe that’s almost started as rectangular pizza and rolled up into the bread tin. Every bite becomes cheesy and filled witht hat iconic biltong flavour. You can however bake it in the oven on high heat like a pizza if you are feeling adventurous. Try a variation by replacing the biltong and with sun-dried tomatoes and olives instead. Serve the bread slices with a thick spread of butter and taste the real South Africa.

Ingredients

  • 500 grams 500 bread flour

  • 20 grams 20 instant yeast

  • 1 tbsp 1 salt

  • 1 tsp 1 sugar

  • 400 ml 400 warm water

  • 75 grams 75 butter, melted and cooled slightly

  • 1 tsp 1 dried herbs

  • 1 cup 1 biltong

  • 1 cup 1 grated cheddar cheese

Method

  • Place yeast, salt and sugar together in a small mixing bowl and add 300ml of the warm water.
  • Make a well in the centre of your flour and pour in yeast mixture.
  • Add butter and herbs and continue to work in well. Your dough should be wet and sticky if not add a touch more of the warm water.
  • Knead the dough for approximatley 10 minutes until the dough starts coming together and appear silky and smooth.
  • Place dough onto a floured surface and roll into a ball. Grease a mixing bowl, add your dough, cover with clingfilm. Leave to rise until your dough has doubled in size.
  • Stretch the dough out into a flat, rectangle shape.
  • Sprinke the biltong and cheese onto the flattened dough.
  • Grease a bread loaf tin and add the dough to the pan.
  • Rub some oil over the top and leave to rise for another 30 minutes. In the meantime, preheat the oven to 180°C.
  • Once the dough has risen, bake in the oven for 40 minutes or until golden in colour.
