If you’ve started your year off trying to cut out more carbohydrates, it can be hard to find tasty alternatives to your favourite foods. An iconic breakfast treat for are potato hash browns but there is a way to enjoy them with dinner too. Cauliflower hash browns are the perfect addition to your week night dinner! Made with cauliflower, onions, eggs, cheese and spices, everyone will love these low-carb hash browns.

The cauliflower is light, so it actually makes each cauliflower ball even easier to enjoy. They are great with dinner or breakfast and have great healthy ingredients without too much effort. If you want to use less oil, spray them with some olive oil and pop them into the air fryer until golden brown. These hash browns are also great on the snack table for game day on the weekend right next to the fried wings and chicken strips, and dip.

Ingredients

  • 5 cups 5 chopped cauliflower florets

  • 2 2 eggs

  • ½ cup ½ all-purpose flour

  • ½ tsp ½ baking powder

  • salt and pepper to taste

  • vegetable oil for frying

Method

  • Place the cauliflower into the food processor and process until finely minced.
  • Transfer the cauliflower into a large mixing bowl and add the rest of the ingredients, excluding the vegetable oil. Mix everything well. (You should have a nice, paste-like mixture. If the mixture looks a little too soft and moist – add some more flour)
  • Using an ice-cream scoop as a measure, form small, ⅓ inch-thick patties. You can make them smaller or larger depending on your personal preference.
  • Fry the patties on medium heat, in a small amount of vegetable oil for about 2 minutes per side.
  • Serve the hash browns with sour cream or your favorite sauce.
