Whenever somebody asks you what the tastiest meal of the day is, breakfast is often what you’ll get. Not only is it the most important meal of the day for loads of energy, some of our favourite ingredients are always included. Bacon, eggs and cheese often make their way onto your breakfast plate but potatoes should be there too. This breakfast spud recipe is a hearty start to your busy weekend full of adventures with your friends and you should make this for them too.

Breakfast spud suggestions

Make sure you’ve cooked your potatoes a bit so that they are easy to scoop and cut down on time in the oven. You can either use bacon bits or strips for your filling and even add some cherry tomatoes if you’re feeling adventurous. Baked eggs are surprisingly delicious but if you’re unsure, you can fry them and add them at the end. You can of course also use sweet potatoes for this recipe and serve everything with a cup of coffee and whatever tasty sides you can think of.

Breakfast spud recipe

Ingredients

  • 6 medium 6 boiled potatoes

  • 12 slices 12 back bacon

  • 12 12 eggs

  • 5 ml 5 mixed herbs

  • 15 ml 15 vegetable oil

  • salt & pepper

  • cheese (optional)

Method

  • Par-boil the large potatoes for about 15 minutes but don’t overcook them.
  • Halve the potatoes.With a spoon, remove the middle of the potato to make a hollow space for the egg. Drizzle with oil.
  • Place a strip of bacon over each potato. Drizzle with oil. Bake in a pre-heated oven, 200°C, for 10 minutes. Remove from the oven.
  • Break an egg over each piece of bacon. Season with salt, pepper and herbs. Place back in the oven for 10 minutes.
  • Grated cheese over the egg optional (opitional)
