Baking is so much fun and there are many things to delve into. Recently, large cakes have become less popular and a big serving of tasty cupcakes become the substitute. You’ve heard of red velvet cake which is chocolate cake and coloured by beetroot or food colouring but these beautiful blue velvet cupcakes will become the new favourite. With a smooth and buttery cream cheese icing, you’ve got a dessert that you’ll be taking lots of photos of too.

The cake batter is easy to put together and comes out light and fluffy with a rich chocolate flavour. You can also adjust the blue food colouring and adding bit by bit is the best idea. You can also colour the cream cheese frosting with different colours like blue, pink, yellow and anything that gets you excited. Top them with rainbow sprinkles and even chocolate ones. They’re all perfect for large events or just a snack for a birthday party and family treat.

These delicious cupcakes are topped with a decadent cream cheese frosting.


  • 280 ml 280 cake flour

  • 250 ml 250 sugar

  • 10 ml 10 baking powder

  • 5 ml 5 bicarbonate of soda

  • 2 ml 2 salt

  • 30 ml 30 cocoa powder

  • 4 4 eggs (separated)

  • 125 ml 125 oil

  • 125 ml 125 water

  • 10 ml 10 blue food colouring

  • For the icing
  • 500 ml 500 icing sugar

  • 100 g 100 room temperature butter

  • 250 g 250 cream cheese

  • 15 ml 15 lemon juice

  • blue sprinkles for decorating


  • Preheat the oven to 175°C.
  • In a bowl, sift the flour, baking powder, bicarbonate of soda and salt. Add the sugar to the flour and stir in.
  • Separate the eggs and whisk the egg whites to a stiff peak. Set aside.
  • Whisk egg yolk, oil and water together and add to the flour.
  • Mix the cocoa powder and food colouring until it forms a paste. Add to the flour mixture until fully combined and the batter is a dark blue.
  • Fold the egg whites into the flour mixture.
  • Transfer the batter into lined cupcake trays and bake for 12 to 15 minutes until a toothpick comes out clean.
  • Allow to cool and prepare the icing.
  • For the icing
  • Combine the icing sugar, butter and lemon juice until combined and whisk in the cream cheese. Do not over mix the icing as it will become runny.
  • Once the cupcakes have cooled, top the cupcakes with the icing using a star tip icing nozzle and sprinkle with decorations.
