In the mood for some real traditional South African cuisine? Try this garlic butter steak with pap recipe. It is incredibly delicious and tastes just like home.

Using pap as your carb in this meal makes this dish truly South African. Whenever you prepare pap, you need to make sure you prepare an accompanying dish that has a mouth-watering sauce or stew so that the pap can be enjoyed with the sauce or stew. This recipe comes with a delightful butter garlic sauce which you need to spoon generously over the pap.

This recipe instructs the steak to be cut into bite-size pieces, but you can prepare your steak in a large cut as well. Just make sure that you prepare enough of the delectable garlic butter sauce that will infuse with the meat and soak into the pap.

When dishing up, pour the garlic butter over the steak as well as the pap. Enjoy!

  • Garlic butter steak
  • 1 tablespoon 1 olive oil

  • pound sirloin steak cut into bite-size pieces, or strip loin, tenderloin, strip steak or rib eye

  • ½ teaspoon ½ salt or to taste

  • ½ teaspoon ½ pepper or to taste

  • 2 tablespoons 2 butter unsalted

  • 4 cloves 4 garlic, minced

  • ¼ teaspoon ¼ red pepper flakes

  • 1 tablespoon 1 parsley fresh, chopped

  • Pap
  • 1 cup 1 maize meal

  • 4 cups 4 water

  • ½ teaspoon ½ salt


  • Garlic butter steak
  • Add the olive oil to a large skillet and heat it over high heat. Make sure the olive oil is hot, then add the steak pieces to it. Season them generously with salt and pepper.
  • Cook for at least 2 minutes before stirring the steak pieces. You want to make sure you get a good sear on them. Continue cooking for another 2 minutes until they’re golden brown. If your skillet isn’t big enough, you may need to do this in batches.
  • Transfer the steak bites to a plate and in the same skillet add the butter. Turn the heat down to a medium and after the butter has melted, add the garlic and red pepper flakes. Cook for about 30 seconds while stirring, just until the garlic becomes aromatic and starts to brown.
  • Pour the garlic butter over the steak bites and toss well serve with the pap.
  • Pap
  • Place pot on the stove and add 3 cups of water and salt and bring to boil. (Stove must be on high).
  • In a bowl add the maize meal and the remaining cup of water and stir until properly mixed; it should form a paste.
  • Add the mixture to the boiling water and stir continuously until it thickens. Close the pot and reduce the heat to low.
  • Allow cooking for another 30 minutes. (Stir every 5 minutes).
  • Serve with the steak bites.
