Cottage pie: The best way to stay warm this winter

What is better than coming home on a chilly winter’s day and walking into the warmth of the kitchen engulfed with the aroma of cottage pie? This recipe will bring all your childhood memories flooding back to you while you wait in anticipation for this delicious comforting meal to be served.

With the cold rainy season kicking in now, it is time to bring out all your comfort food recipes to keep the family warm from the inside.

What is cottage pie?

Cottage pie is minced beef meat fried with aromatic spices in a fragrant red wine. Then it is spooned into an oven dish and covered with fluffy mashed potato. Pop it into the oven and bake until the mashed potato on top transforms into a beautiful golden colour.

Ingredients

  • Filling
  • 500 g minced beef

  • olive oil

  • 1 large onion, finely chopped

  • 1 clove garlic, crushed

  • 1 teaspoon fresh ginger, grated

  • 2 tablespoon fresh coriander

  • 1 teaspoon cumin seeds

  • 3 cardamom pods, ground

  • 2 tablespoons curry powder

  • ¼ cup Mrs Balls chutney

  • cup chopped dried fruit

  • ½ cup red wine (Cabernet Sauvignon or Pinotage)

  • ½ cup water

  • salt and ground black pepper to taste

  • Topping
  • 6 large potatoes, cooked and mashed

  • generous knob of butter

  • ½ cup milk (increase if mashed potato consistency is too thick)

  • salt and pepper to taste

Method

  • Preheat the oven to 200°C.
  • Heat oil in a skillet and brown the minced beef. Remove and set aside.
  • Add more oil and sauté the onions until glossy.
  • Add the garlic, ginger, coriander, cumin, cardamom and curry powder and fry for another minute.
  • Return the meat to the skillet and add the remaining ingredients. Allow to simmer gently for 30 minutes or until the sauce reduces and the meat is tender.
  • While the meat is simmering, prepare the mashed potatoes. Peel the boiled potatoes, and use a potato masher to mash the potatoes. Add a generous knob of butter and milk and continue mashing until the mashed potatoes are the desired consistency. Remember to add salt and pepper to taste.
  • When the meat is ready, spoon it into an oven dish spreading the meat even in the dish.
  • Spoon the mashed potato on top of the meat and spread it evenly.
  • Bake for 30 minutes in the oven or until golden.
