We all need to indulge in a sweet treat from time to time. These decadent chocolate coconut balls are the ultimate dessert or sweet snack to prepare for your family.

If you are a chocoholic, you are in for a real treat when taking a bite of these gems. The combination of coconut, cashew, maple syrup, rich melted chocolate and a dash of salt is incredibly delicious. In fact, one bite and you may not be able to stop. That is how addictive these chocolate coconut balls are.

Ingredients

  • 3 cups 3 shredded coconut

  • 1 cup 1 cashews

  • 1 tablespoon 1 maple syrup

  • 2 teaspoons 2 coconut oil

  • 1 teaspoon 1 vanilla extract

  • dash sea salt

  • 58 g melted chocolate

Method

  • In a food processor, blend cashews and shredded coconut until the mixture is finely chopped. Add vanilla extract and maple syrup, and blend more until the mixture is slightly sticky.
  • Form mixture into balls and place in the fridge until the balls are firm, about 20 minutes.
  • In a small bowl, mix the melted chocolate with coconut oil to make the chocolate sauce. Dip the frozen coconut balls into the chocolate sauce, making sure to cover them entirely; set on a baking dish lined with parchment paper.
  • Chill again for about 20 minutes until the chocolate has hardened.
