The best thing about quiche is that it is a power-packed meal loaded with milk, eggs, greens and protein all in one dish. With the added biltong this quiche becomes simply unbelievable.

Ingredients

  • Crust
  • 500 ml 500 almond flour

  • 125 ml 125 finely grated Parmesan cheese

  • 1 pinch 1 of cayenne pepper

  • 1 1 egg

  • Filling
  • 500 ml 500 full-fat yoghurt

  • 250 ml 250 cheddar cheese, grated

  • salt and pepper (remember the biltong and cheese are already salty)

  • 5 5 eggs

  • 400 ml 400 sliced beef biltong

  • 1 large 1 onion, chopped and caramelised in a little butter

  • fresh herb of your choice

Method

  • Preheat the oven to 180°C.
  • For the crust
  • Place all the ingredients in a food processor and blitz until it just comes together.
  • Spray a loose bottom quiche pan with Spray ‘n Cook and press the almond mixture into the pan.
  • Chill in the fridge for a few minutes.
  • Filling
  • Mix all the ingredients, except the biltong and pour into the pastry case.
  • Now scatter the caramelised onion over the custard mixture.
  • Bake in a preheated oven to golden perfection.
  • Serve with fresh rocket and sliced tomato!
