Look, most of us made banana bread in the last two years and it’s still great. However, sometimes you want to enjoy it on the move and muffins are a great way to do it. Our healthy banana muffins are as tasty as they are good for you, especially for breakfast on the go. Bananas are packed with potassium and dates are great for texture and digestion. There are so many different ways to enjoy them and the choices are with you.

Tips to enjoy your healthy banana muffins

First off, you’ll know the bananas are ready when the skins have lots of black spots on them. This is when the bananas are nice and soft as well as have a great deal of flavour. You can enjoy them with sweet toppings like jam and whipped cream, especially with a cup of tea or coffee. For a more savoury treat, try butter and cheese for the classic topping. Go a bit crazy by adding bacon bits and you’ve got a real treat on your hands.

These banana muffins are moist and delicious and naturally sweetened. They take just a few minutes to make and are perfect for quick breakfasts and snacks.

Ingredients

  • 3 ripe bananas, mashed

  • 3 eggs

  • 1 cup dates, chopped

  • 1/4 cup honey

  • 1 tsp cinnamon

  • 1 tsp baking powder

  • 1 tsp bicarb

  • 2 cups flour

Method

  • Preheat oven to 180°C. Line a muffin tray with muffin liners.
  • Soak the chopped dates in a ¼ cup of boiling water to soften them.
  • In a large mixing bowl add the mashed banana, eggs and cinnamon. Mix well.
  • Add the dates and honey and mix.
  • Add the flour, baking powder and bicarb and mix.
  • Spoon into a muffin trays.
  • Bake for 15 minutes, on until cooked through. Remove from the oven and allow to cool.
  • Serve warm with butter.

Notes

  • To make these muffins even more healthy, add a 1/2 cup of any of the following: sunflower seeds, raisins, oats or chopped nuts.
