Ingredients

  • 4 tablespoons butter

  • 1 cup red onion, chopped

  • 1 cup spinach, chopped

  • 2 teaspoons thyme

  • 8 chicken breasts, boneless

  • 1 cup cheddar cheese, grated

  • 1 packet bacon slices

Method

  • In a pot add 1 tablespoon of butter, red onion, spinach and thyme. Cook 2 – 3 minutes until tender and set aside.
  • Add the cheese to the cooked mixture.
  • Fill the chicken breasts in the centre with the stuffing mixture and roll over and wrap with bacon fastening with toothpicks to keep them tight.
  • In a casserole dish, add the remaining butter and bake the chicken breasts for 40 minutes and serve once baked.
